Refreshing Summer Beverage Recipe

I’ve been experimenting in the kitchen with how to make fun beverages to cool down with this summer. In this blog I’ll share how to make a beverage switchel. I first learned about switchels during my current herbalist apprentice program.  A switchel is sometimes referred to as “haymakers punch,” because after days’ worth of work in the hot sun, farmers would recharge with this brew.

I like this beverage because it’s healthier and more refreshing than a soda, and more flavorful than a kombucha.  At least that’s what I think!  You’ll have to try it for yourself and let me know!


I will preface the recipe by saying it tastes better than it seems.  I know, I know, most folks might find apple cider vinegar and ginger a repulsing combination, but they are background flavors that give the beverage a refreshing kick.

Ingredients

2 cups of fresh or frozen berries (such as strawberries, blueberries, and raspberries)

¼ cup apple cider vinegar

2 inches of fresh ginger root

2 cups of water

¼-½ cup of maple syrup

1-2 cans of bubbly (I used blackberry flavored)

4 cups of ice cubes (approximately

Cut ginger root into thin slices (approximately ¼ inch) and place in pan with water.  Bring to a boil and then simmer covered for 20 minutes.  Remove from heat and cool to about room temperature.  Filter the ginger water into the blender along with berries, apple cider vinegar, and ¼ cup of maple syrup.  Blend on high for about one minute or until the fruit has blended completely.  

Pour into a serving pitcher or mason jar and store in fridge. You may serve immediately by filling glass with ice cubes, filling the glass about 1/3 of the way with bubbly (or to taste) and then adding the berry ginger brew to make a near full glass.  Stir, taste and add additional maple syrup or bubbly if desired! Of course have fun and make it your own. Play with different kinds of fruits and flavors of bubbly. You can also substitute molasses for maple syrup.
